With more than 30 years experience in the Anchovy business, Miguel-Angel Gonzalez-Barredo born and raised in Santoña, elaborates in his company Conservas Gonsal, exquisite anchovy fillets in olive oil, authentic “Engraulis Encrasicholus” Please understand that Santoña a small harbour place in Cantabria, is famous for elaborating and preparing anchovies. The people of Santoña inherited this knowledge of the Sicilians, whom settled in the beginning of the XX century. This same knowledge and experience Miguel Angel uses for the elaboration of each anchovy entering in his business, regardless the origin of the fish, which could be Argentinean, Peruvian, Cantabrian or Mediterranean.
